paellas cooked with vegetables and cuttlefish.The Mona de Pascua (a
typical sponge cake with a boiled egg on the top) is eaten for easter.

al horno (pastries cooked in the oven) with melva (similar to bonito
roe), spinach and peas. Rice cooked with rabbit and chickpeas.The
festivities of Sant Vicente Ferrer, fish is salted to be pickled (sardines,
melva, fresh fried anchovies). |

cooked with cod, onion and cauliflower (a traditional month poor in
raw materials). |
| JUNE |
dried
bonito stewed wiht potatoes.The octopus fishing season starts (at
full moon in june no one eats stew as it produces headaches). |
| JULY |
red
mullets, golden fish and fishing line fishes, all of them cooked covered
in salt, in the oven or fried. Snails with ink are also eaten during
this month. Fiestas in honour to the Virgins of la Mare de Déu dels
Desamparats, /a Mare de Déu del Carme and the Font Santa are held.Traditional
cakes and drinks such as the local pastry called coca maria and a
lemon drink with cinnamon, tiger nut milk or almond milk are available
this month. |
| AUGUST |

and espencat, a mixture of peppers, aubergine or chopped garlic. Melons
and water melons, as well as all kind of fish including grouper. Picking
season for muscatel dessert grape. |
| SEPTEMBER |

de peix (a fisherman's pot), different dishes cooked with scorpion
fish and milt, bonito, squid and garfish. Raisins are dried at the
riurous (Valencian country house).The wine harvest season starts.
Festa del Moscatell (Muscatel wine festivity) is held. Grape brandy,
mistela (sweet must), peanuts in the oven, lupins and pastry with
almonds (coca marfa de almendra).The mistela is elaborated at this
month. |

octopus
and minced meat, rolled with cabbage in sauce (pucheros de polp i
de cam amb pilota). Pork meat in the oven, grilled and fried. The
pig killing season starts. Festivity of Santa Catalina. |
| DICEMBER |

and duck fattened, in stews and paellas. A typical rice dish with
conger an moray called marinera de congri y morena. Els pastissos
are prepared, these are small pies made of almonds and stuffed wit
sweet potato.They are traditional eaten for Christmas. A popular Christmas
market is held. |
